PROTECTED GEOGRAPHICAL INDICATION PAYS D’OC
A beautiful, intense, cherry red colour with glints of dark purple. The nose is deep and rich, with aromas of fresh fruit, notes of fig and spices, such as white pepper and bay leaf. Powerful, it will charm you with its depth. A way of life typically Mediterranean accompanies the taste of this wine. Round on the palate, with a good volume and melted tannins. After a fresh attack, the palate is rich, round and velvety with good length.

VINTAGE : 2022
GRAPE VARIETY : 100% Merlot
VOLUME : 13,5%
VINIFICATION : At dawn’s first light, the grapes are selected and picked to conserve their freshness. The grapes are harvested in full maturity, and then vinified using the traditional method in vats. The maceration is long, lasting 3 weeks, with the pump-over occurring twice a day during the first week, then once a day in the second week. Fermentation temperatures are regulated to around 25° in order to extract only the best aromas. Malolactic fermentation carried out in tank.
AGEING : This wine is matured traditionally in vats with a small part of it (30%) aged in wood, which adds complexity to the purity of this wine.
TERROIR : The climate is mild and sunny with a Mediterranean freshness and good rainfall. The winters are mild and the summers hot, which allows optimal ripening of the grapes. Pebbled garrigue soil from an ancient Quaternary glacier
WINE AND FOOD PAIRING : Ideal to pair with red and white meats, pasta in sauce, risottos, and fried dishes. Serve at 15/16°C.
