This wine offers a colour of intense red which shimmers in the glass. The nose opens on notes of black cherry, blackberry and vanilla, combined with nuances of cedar and spices which give it an intense bouquet and a calling to travel through its terroirs. The palate is round, full and generous with nicely melting tannins. A balance between dark fruits and spices bring a finish which is strong and intense. Oak aging strengthens the ensemble of tastes which is complex lasting and persistent on the palate.

VINTAGE : 2021
GRAPE VARIETY : 100% Merlot
VOLUME : 14%
VIGNIFICATION : At dawn’s first light, the grapes are selected and harvested to conserve their freshness. The grapes are harvested once fully ripened, and then vinified and macerated using the tradition method in tank. The maceration is long, lasting 3 weeks, with the pump-over occurring twice a day for two weeks. Fermentation temperatures are regulated to around 25° in order to extract only the best aromas. Malolactic fermentation carried out with oak.
AGEING : These merlots are aged for 3 months in wood before bottling.
TERROIR : The climate is mild and sunny with a Mediterranean freshness and good rainfall. Pebbled garrigue soils from an ancient Quaternary glacier.
WINE AND FOOD PAIRINGS : This wine will go wonderfully with red meats, Asian cuisine, dishes in sauce or game. Serve at 16°C.
