PROTECTED GEOGRAPHICAL INDICATION PAYS D’OC
This wine offers a bright, shiny, pale-yellow colour. Its nose is complex, mixing aromas of white flowers, jasmine and ripe fruits, such as white peach and apricot. Soft vanilla notes add complexity to the ensemble, which is aromatic, limpid, and captivating. The palate offers a nice balance between complexity and tension. Expressive, it opens with notes of pear, a creamy texture and toasted hints derived from its aging. It has an elegant freshness on the mid-palate, supported by notes of wood. It has a lasting saline finish, with persistent toasted aromas.

VINTAGE : 2023
GRAPE VARIETY : 100% Chardonnay
VOLUME : 13,5%
VIGNIFICATION : At dawn’s first light, the grapes are selected and harvested to conserve their freshness. The fermentation is carried out in oak for several weeks at a low temperature (15 to 17°). The wine is then extracted and aged on fine lees. A second oak aging is carried out once the lees have been removed. The bâtonnage occurs twice a week during the first month.
AGEING : These chardonnays are oak aged for a minimum of 3 months before bottling.
TERROIR : The climate is mild and sunny with a Mediterranean freshness and good rainfall. The winters are mild and the summers hot, which allows optimal ripening of the grapes. Sloped hillside soils of clay-limestone.
ACCORDS METS-VIN : This wine will go wonderfully with pasta, fresh vegetables, mushroom risotto, a number of cheeses and all types of cooked fish. Serve between 10° and 12°C.
