PROTECTED GEOGRAPHICAL INDICATION PAYS D’OC

A light-yellow colour with glints of bright green. This wine offers complex and intense aromas with citrus notes (mandarin), white flowers and almonds. Subtle notes of cinnamon accompany the ensemble. A fruity and intense, well balanced wine, bringing beautiful notes of white and yellow fruits (peach, melon, and pear), as well as the characteristics of its grape variety. Long on the palate, fresh and balanced are the terms which define this wine full of purity.

VINTAGE : 2023

GRAPE VARIETY : 100% Chardonnay

VOLUME : 13,5%

VINIFICATION : At dawn’s first light, the grapes are selected and harvested to conserve their freshness. The fermentation is carried out at a low temperature (15 to 17°). The wine is then racked and aged on fine lees. The bâtonnage occurs twice a week during the first month.

AGEING : This wine is matured traditionally in vats with a small part of it (30%) aged in wood, which adds complexity to the purity of this wine.

TERROIR : The climate is mild and sunny with a Mediterranean freshness and good rainfall. The winters are mild and the summers hot, which allows optimal ripening of the grapes. Sloped hillside soils of clay-limestone

WINE AND FOOD PAIRING : Ideal with platters of hard cheese, pasta and olive oil dishes, seasonal salads, fish, and sea food. Serve at 10-12°C.
